Explanation of Kobe Beef & American Kobe (Wagyu)
The original Kobe cows were bred as far back as the second century in Japan as work beasts and feed for Japan's warrior class. They are known for the superior marbling (the fine flecks of fat throughout the muscle) which give it a velvety and buttery taste. Just like Champagne is the term for bubbly wine from the Champagne region of France, yet many incorrectly use it as a generic term to refer to bubbly from elsewhere by the same name, Kobe can only be raised and produced from Kobe, Japan. All genetic decedents from the imported/smuggled Kobes into America are correctly called Wagyu, a Japanese term meaning Wa- (Japanese-like) & Gyu (Cattle).
Health Aspects of Kobe
Higher in Omega-6 & Omega-3, Wagyu cattle produce healthier beef higher in the "good" cholesterol (HDL) and lower in "bad" cholesterol (LDL). That it tastes great is just an added bonus.
